5 king prawns, 2 fish
shaped puff pastries,
1 spoon of tomato
sauce, 2 spoons of
American or shrimp
sauce, 1 small glass
of brandy, 1 small
glass of white wine,
salt and pepper.

Lightly fry the king
prawns with salt and
pepper. Flambé
it using the brandy.
Pour in the white
wine. Allow it to
thicken a little.
Add the tomato and
American (or shrimp)
sauce and a little
bit of “fumet”.
Allow it to boil for
two minutes and then
remove the king prawns.
Thicken the sauce
and serve on top of
the king prawns. Decorate
the dishes with the
fish shaped puff pastries
and flowers. |
